It’s Pumpkin Time! 

My sweet friend Kristy sent me this recipe today and I didn’t hesitate to try it out! I unashamedly love when Autumn arrives with all things pumpkin! It’s a simple recipe to throw together and with clean ingredients I feel good about our family enjoying this  pumpkin treat! 

Pumpkin Bread

Oven set to 350 degrees 

Mix dry ingredients:

1/2 Cup of  Flour Coconut Flour (sub with Almond, Spelt or Whole Grain Flour)

1/4 Cup Arrowroot Flour (sub with Tapioca Flour or Cornstarch)

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

1 Teaspoon Pumpkin Pie Spice

Mix wet ingredients:

2/3 Cup Pumpkin

4 Eggs

1/2 Cup Coconut oil (sub with Unsweetened Applesauce)

1 Teaspoon Pure Vanilla Extract

1/2 Cup Pure Maple Syrup (sub with Agave, Honey, Date Syrup) 

Optional: 1/4 Cup of a little something extra like: Chopped Pecans, Walnuts, Pepitas, Chocolate Chips

Combine with dry ingredients 

Grease a loaf pan and bake for 45 minutes, allow to cool. I recommend refrigerating.
