Mom says “Eat Your Veggies”


One of my goals over the past couple months has been to add a portion of vegetables to every meal and snacks. Some people claim to hate veggies, others forget they exist! Ha! Try to get a variety of colors and prepare them in different ways. Change things up and explore new recipes. I love carrots roasted or raw, and in every color! So apparently I buy them compulsively!!! 

Favorite way to roast my carrots:

Whole carrots, coated in coconut or olive oil. Season with salt, pepper, fresh rosemary, a sprinkle of lemon juice and balsamic vinegar 

Roast at 375 for apx 30 minutes
