Trying new easy recipes! 

I’m always looking for new ways to serve up and prepare meals. I find most of mine through Pinterest!! There are loads of recipes on there for easy Buddha Bowls, that’s where I was inspired and tried one myself. 

Here’s the basics of a Buddha Bowl

I started by cooking some boneless, skinless chicken breast in a skillet with apx 1 Tablespoon of coconut oil, then seasoned with taco seasoning. From there I used the same pan to heat 1 can of pinto beans with jalapeño bits in it, but mild so kid friendly! 

While that was cooking I had water boiling and made up some pretty purple rice!!! 

Now for my veggies! I did cherry tomatoes, rainbow carrots, mixed greens and red onion. But any vegetables you have in the fridge works too! 

Then assemble your bowl! 

Top with a little hot sauce or salsa…easy, nutrient dense and soooo good!
