So last night I had the amazing seared tuna from Metropolitan Grill here in town. It is delicious if you ever want to try it out! I’ve been excited all day about the leftover tuna in my fridge, whoop!
Tonight I prepared curried cauliflower rice and cooked spinach to go with my protein goodness. The result was so yummy I felt like I was eating at a gourmet restaurant all to myself!
The cauliflower rice is soooo easy!
Here you go:
Boil 1 head of cauliflower until tender not mushy! Then put over in your food chopper, processor, ninja etc. season as you like, tonight I did 1 Tbsp.red curry paste, drizzle of olive oil, salt and pepper to taste. Once it’s all chopped up I simmer in a large skillet on low heat with a Tbsp. of coconut oil in the pan, for about 15-20 min. Stir that occasionally, and I like to go high heat for a few minutes at the end to brown just a bit. This is one easy way to make vegetables taste different and fabulous!
